Gus, determined that Cate would not have to give up GOOD bread, began to study with the books of the best bakers and the references of the Sourdough in San Francisco (cradle of the modern Sourdough) and after more than 4 months of tests, the first
Uco Sourdough was born.
When we arrived in Mallorca, we were very clear that we wanted to continue with this work based on love and respect for the local product and we could not have asked for a better welcome. For us there is nothing more gratifying than continuing to make bread for the same people who started buying from us in August 2020 and that every day we manage to reach more people interested in eating REAL BREAD.
Instagram worth following: @isla_et_nomad We now Nuria personally (they bought our bread before we even had the bakery!) and she is such a calm and wonderful person. Her instagram reflects the Mallorcan slow life: beautiful landscapes, ceramics, art and of course food. Watching her stories is like going to a Spa!
Favourite place to swim: anywhere in the tramuntana really, as sea life is much more abundant! We love going with our weimaraner, Mambo, to
Es Canyaret. Near Deià.
A place worth eating at: We love Es Taller in Valldemossa! In Palma we always go to Andana. Delicious food by Maca De Castro, she harvests all the veggies from her garden. Service is always perfect.
Who is making a product we should know about: When we moved to Mallorca one of the things that amazed us was how many incredible and unique products were produced here. Foodwise, we have never eaten better or healthier! Just to quote some of our favs…
DosAlquemistas Olive Latte, the Carob cream from
Es Garrover, the Spring’s honey from
Mel Vici, organic kombuchas from
Brilla, natural wines from
Cav.Vins… and so it goes!
We are currently obsessed with the linen embroidered napkins made by Irene from
@cansoleil. They are so delicate and unique… she made a special design for
UCO and they were a success!

What is one other secret/great tip about Mallorca that you'd like to share with our readers: Mallorca is about exploring! We have been here for some years now and still discover something new every week. Try not to plan too much and just ‘go with the flow’ to feel the island’s vibe. Get lost in its small towns and go off the main road to find small local & non touristy restaurants, local farmers, ceramics… create your own personal Mallorca!
